Coconut Strawberry Basil Paleta | Summer Goodness

If you read my last post, you know I was gushing about how much I love basil. Well, my love affair continues and basil is a big part of this recipe, too! This time though, I took it up a notch and added it to paletas.


So, what exactly is paleta? These delicious frozen treats are actually Mexican ice pops-- a version of the American popsicle. Paletas are typically made by hand, containing fresh fruit and/or dairy. Traditional paletas may contain ingredients like pineapple, jicama, cucumber, mango, watermelon, lemon and….if you like it spicy….cayenne pepper!

The weather is heating up outside, so it was the perfect time to attempt my hand at homemade paletas! And, according to how fast my family devoured them, I’d say it was a success! For this recipe, I used coconut milk, homegrown basil and strawberries. The result is nothing short of a party in your mouth! BONUS- I got to involve my kids in the cooking process- which I love to do any chance I get! These Silver Spoons paletas were fun and easy to make together!

The strawberries are from Burge Organic Farm. Amazingly sweet and juicy! If you haven’t had a chance to check them out- do it before the season is over and capitalize on how better quality ingredients can really take your recipe to the next level! Depending on where you live, strawberries are in season well into June. I like to buy a flat of strawberries, freeze them and pull them out during the dreary months of winter when I need a reminder of summer. As an added nutritional bonus, strawberries pack a powerful punch of vitamin C and are very low in calories.


When local, fresh strawberries are paired with coconut milk and you add in the lemon and basil...the result is a creamy paleta with a refreshing herbal zest! Truly delish and a perfect dessert accompaniment to your summer BBQ menu!

Coconut Strawberry Basil Paleta

Author: Margot Witteveen, MS, RDN, LD

Type: Dessert

Serves: 8 - 10




2 cups of strawberries

½ cup basil

1 can coconut milk (full fat)

Juice of ½ lemon

½ tsp of vanilla

Pinch of salt



Place all ingredients in blender and puree until smooth. Pour into popsicle mold. Freeze for 8 hours or overnight. Pop out of mold and enjoy!
